Peacefulness: [01h53m] here is the method I used last tale to breed specific types of trees.  First, figure out what you want to aim for.  Make that goal ONE thing.  For me it was greenish lime trees.  I was working on Festivals citrus stock, and that was our lowest item.
 
 
 
Peacefulness: [01h49m] The ideal values for a lime are Color 100,  Sweet 200, Size 400, Length 650To qualify as a lime, it has to have all four attributes closest to those numbers.  For comparison, a lemon's ideal values are Color 400, Sweet 300, Size 400, Length 650.
 
 
 
Peacefulness: [01h49m] Once a lime gets too much color, the game calls it a lemon.
 
 
 
Peacefulness: [01h46m] to get a lime tree, I'm going to breed my entire grove (or as much of it a I can) toward limes.  100, 200, 400, 650.  I'm going to breed for one attribute at a time.  I decided to aim for low Color, since that is the most extreme value. 
 
 
 
Peacefulness: [01h45m] Looked at all the trees in  my grove and picked out the two with the lowest color number.  Lets say the best I had were a 400 and a 438
 
 
 
Peacefulness: [01h43m] I mulched ALL the trees, except for those two.  It hurt.  It was hard to do.  I eventually got used to it.  Let the grove regrow.  An hour later, all the trees pop up again.
 
 
 
Peacefulness: [01h41m] Chances are, I would have a bunch of 400s.  A bunch of 438s.  Maybe some 420s.  Every now and then, something else pops up.  That's what I'm waiting for.  There will eventually be numbers "outside the norm".  Sometimes, higher, sometimes lower.  Keep the lowest two and mulch everything else.
 
 
 
Peacefulness: [01h39m] Eventually, by keeping the low number that sneak in and mulching everything I don't want right now, I will have trees with color approaching 100.  And it will grow an entire grove of Color 100 trees.  The more often you can mulch, the less painful it is.

Peacefulness: [01h36m] Once you've got the color where it needs to be, you look at the next attribute that is really far off, whether its the sweet, size, or length.  Eventually, you will get the fruit type you are wanting.
 
 
 
Peacefulness: [01h33m] Got that one fruit?  Mark your "Keeper" tree(s).  Bonfire around the base works.  Mulch the entire grove and see what pops up.  Then you can push the numbers toward a different variety.  One attribute at a time.  The tree you keep will sometimes be the parent tree, and you'll have to keep a few more potential parents around.  I know players who managed to breed every type of citrus in a single grove.  (but they had a ton of trees)
